Princess in a Ballarina Dress

Is it a cake or a dress??? I can’t even begin to express how excited I was to make this cake. It was actually inspired by this tutorial. My customer saw this pic, and after some very minor changes, we agreed that it was perfect for her Princess themed baby shower. My cake is a 10″ cake topped with an 8″ cake. (The original is an 8″ cake topped with a 6″ cake.) The inside flavors are vanilla cake with cannolli filling. This is New York; where any native NY baker is expected to produce a delicious, authentic cannolli filling! It’s one of my best-loved flavors, to be honest. The entire cake is covered in white fondant; the top with quilting and pale pink pearls. Each ruffle on the bottom tier is individually cut out, shaped and attached with a dab of white chocolate. One of the most enjoyable cakes I’ve ever had the pleasure of making!

Gucci Purse Cake

I’ve done a few of these, and this shape has been the most sturdy thus far. It’s red velvet cake with cream cheese frosting entirely covered in fondant. All the embellishments are also done in fondant. The pattern is painted with edible gold dust and a touch of vodka. This cake was big enough for about 10 people.

The Hookah Cake

First, let me apologize for a horrible picture!! But, this cake really came out to be very realistic. The bottom vase of this “hookah pipe” is ALL CAKE! It starts with a few layers of 8″ round vanilla cake topped with a dome of vanilla cake. The “pipe” is  a large wooden dowel covered in fondant and painted in silver luster dust. The plate up top is made of gumpaste and also painted with silver luster dust. The hose (?) – you know, that thingy you smoke out of- well, that’s fondant! I was VERY nervous construction this cake because anyone knows that tall, vertical structures need a lot of TLC, stable inner structure, and a lot of balancing, securing, and lots and lots of prayers to the Cake Gods that it doesn’t come apart before you drop it off safely. Definitely a challenge, but worth it in the end. The designs around the base is painted on with gold luster dust. The gold beads are fondant also painted with gold luster dust. There was a lot of luster and dusting going on with this cake!

I still have nightmares about the Spiderman cake that fell to pieces as I tried to stack a Spidey cutout on top of a sheet cake. I don’t use thick, dense pound cake. I use fluffy, moist, crumby cake that tastes delicious. And those kinds of cakes do not make good candidates for cut-outs.

I was a little apprehensive agreeing to make a cake shaped like a number “2”, but after some thought, I figured out a way to make this work. Adjusting some of my techniques, it was successful!

This is a butter cake with a strawberry filling, covered in vanilla frosting tinted in lavender. Princess Olivia was VERY happy! (So was I!)

Unwrap the Goodness

I like doing these cakes where the customer cares that the cakes tastes as good as it looks! That means less fondant. So, the inside is my famous black and white (alternating layers of chocolate cake and vanilla cake with chocolate and vanilla frosting). The outside is vanilla buttercream.  The only fondant on this cake is the pink ribbons and polka dots. The white polka dots are piped frosting.

The occasion? Baby shower for an almost-here baby girl!

Shirt Cake–WAIT! That’s a CAKE?!

Yes! I fooled many people with this cake. I had it on my desk at the day job while I finished writing the words. And several double-takes were taken! Another one of those cakes that make me feel like an accomplished cake momma!

So, this is a two-layer chocolate cake with a chocolate ganache frosting.  I didn’t want to make it too high or it would ruin the effect. Just to be clear, I did flip that tie up so everyone could see that those buttons went all the way up to the top! It’s all in the details, baby!

On a more personal note, this cake (and the cupcakes that came along with it) was an honor to do today. It was for the retirement party of one of the day job’s higher-ups, but more importantly, one of Queenie Cakes’ most creative customers! I have baked many cakes for this man’s family: Gift Box & Roses, Prost! The Beer Cake, Gray Elephant Cookies, Let’s Go Yankees,  and the Easter Eggs & Flowers . Not to mention all the cakes I didn’t have time to snap pics of. The cakes I have baked for them share lots of space on this blog and have shared plenty of space on his family’s tables. Thank you, John! I hope you enjoy your well-earned retirement!

Rainbow Brite Meets the Dirty Thirty

Rainbow Brite could have used a little work, but my 80’s themed Dirty 30 Birthday Cake was a big hit. We’ve got three different cakes going on here. The bottom was a chocolate cake with a Nutella buttercream. The middle was strawberry short-cake, and the top tier was a rainbow assortment with some vanilla frosting in between.

Really, has anything BAD ever come to us from our friends across the Atlantic?

It was my pleasure and honor to be hired by this fantastic family to make Michael’s 50th Celebration Birthday Cake. What I love most about them is that the TASTE of the cake is just as important as the visual. Yes, you want your special cake to look wonderful, but your cake should TASTE good, too.

Fondant gives a cake the finished and smooth look that a lot of people want because they see it on television, but let’s be honest. It doesn’t taste very good, and because of that reality, the cakes I make for them has little to no fondant so that it will not interfere with the taste.

The cake you see here is two cakes in one. The crown is chocolate cake infused with Grand Marnier liquor, filled with chocolate Grand Marnier ganache and covered in fondant. The crown is made of gumpaste and painted in edible gold highlighter. The only part of this cake that isn’t edible is the toothpick holding up the fleur de lis. This is the most fondant you’ll ever see me use on one of their cakes.

The base cake is layers of chocolate and vanilla cake with Ghirardelli milk chocolate ganache as the filling. The outside is frosted with vanilla frosting. Only the flags and small gold beads are made of fondant, and can easily be removed before slicing and serving. This flags are painted (free-hand) with food color thinned out with a little lemon extract.

I absolutely love making cakes for this wonderful family! I cannot wait until their next creative function!

GUCCI Handbag in the Tropics

Not every cake goes off smoothly. Sometimes the weather works against me when I’m handling fondant and sometimes disasters happen en route to the location.  Such was the case with this cake. It was one of the hottest days of the summer and the fondant was tearing and ripping. When I finally had the cake loaded and on its way to the venue, some jackass driver stopped short in front of me, causing the cake to slide forward, the bag to topple over, and all the layers on the “box” to shift, tearing the fondant. The delicate tropical flowers I spent hours sculpting the night before were either smashed or cracked. It took  me nearly 3 hours to fix all the damage one hard brake caused, but my customer was incredibly understanding and patiently shifted around the party itinerary until I arrived.

The cakes are all red velvet and filled with cream cheese frosting. The box is made of chocolate fondant. The flowers are gumpaste. The bag is covered in fondant and gumpaste, and each of the GUCCI symbols are hand-painted with edible color gel. The “sand” is brown sugar.

Little Diva Birthday Cupcake

This was a lot of fun to do! My favorite little Park Slope Divas had their birthdays recently, and I got to make this “Cupcake Cake” for Emery’s 1st Birthday! Sometimes these little projects turn out to be some of my favorites when it’s all said and done.

This cupcake is actually a little larger than a 6″ cake in circumference, and stands about 6″ tall. It’s chocolate cake with chocolate filling. The bottom and sides have green fondant to simulate the cupcake paper, but the top is all pink frosting. It’s decorated with some fondant cutouts, and the sparkle you see is edible glitter.

Designer Diva Birthday a la Louis Vuitton

So, this is my latest and greatest this week. I’ve tried out a new technique that SHOULD (for all intents and purposes) replicate a sorta cheetah pattern INSIDE the cake itself once it’s cut. My Birthday girl has yet to take her cake home and cut it yet, so I don’t know whether or not it worked.  I’m hoping she sends me a picture so  I can update this post tomorrow morning.

This is a 10″ square two-layer cake with chocolate frosting on the inside. The cake is interlaced with chocolate and caramel cake to replicate a cheetah pattern on the inside of the vanilla cake layers. It’s enrobed in chocolate fondant. The Louis Vuitton symbol as well as the mini LV bag is also made of the same chocolate fondant and vanilla fondant. They are embellished with edible gold dust.

It was a true pleasure making this cake!

Ooh La La – The Eiffel Tower Parisian Cake

Can I say that this was one of my proudest moments as a cake momma? Well, it was.

That Eiffel Tower is made of Royal Icing, and it broke in three different places during transport. I had some extra royal icing in a piping bag, but despite my best efforts, I could not glue those pieces back together to get the tower to be stable. My partner stepped in and constructed a little stabilizer made of white cardboard. (Thank you, Joel!) And voila!!!

The first striped tier is 10″ and is Death By Chocolate.
The second damask layer is red velvet. That damask pattern in stenciled on with royal icing.
And, last but certainly not least, is the royal icing Eiffel Tower.

One of my PROUDEST moments EVER as a cake decorator. I want to give some proper credit to Sugar Duchess for her FANTASTIC tutorial on the Royal Icing Eiffel Tower. It was one of the best tutorials I have ever found to date! Check out her site for more exciting stuff!

Baby Butt!

My contribution to the whole baby butt cake theme. The tiers are as follows:

Bottom: 14″ Dulce de Leche

Middle: 12″ Vanilla Cake w/ Cookies and Cream Filling

Top: German Chocolate Cake w/ coconut pecan caramel frosting

I have a new techniques going on here. The bottom tier is the newest. That’s a damask stencil of pink frosting over the fondant covered cake. I was very happy with the method of stenciling. It was a very stunning reveal.

Future Mets Fan

I absolutely love the more socially embraced trend of celebrating baby showers with the Daddy’s. It’s a new world we’re living in, and men should get almost half the credit for a little one on the way.

So, the challenge was a New York Mets themed baby shower cake for the Daddy for a baby whose gender is going to be a surprise.

Challenge accepted!!

The hat is cake, and the cake is only covered in fondant on the top. The rest of just good old buttercream! The flavor was red velvet with cream cheese frosting.

Butt, Of Course!

It’s a butt. It’s a cake. It’s a cake that looks like a butt!!!! Yes, I had a lot of room to make this look more…um….realistic, but there are just certain lines that I don’t believe cake should cross….EVER! I was told by one of my co-workers that a gaudy g-string may have be in order to distinguish my butt cake from being mistaken for boobies from afar.

In any case, that’s the Irish Car Bomb flavor under all that skin- Guiness Chocolate Cake, soaked in Jameson’s and Bailey’s, with a Bailey’s buttercream frosting. The skin is peach colored fondant and the tats are nothing more than food color. The lips, are not mine, by the way. I have some very lovely stamps that I purchased in the scrapbook aisle of my local craft store. (40% off, of course!) I gave it the “lips” texture by going over it with a little more color with a paintbrush.

I know we’re all adults here, but what is it about a Butt Cake that doesn’t make us all giggle?

This was my attempt at a trombone cake. I decided to try and sculpt one out of gum paste, paint it with some gold liquor, and prop it on a box so the bell of the trombone wouldn’t be smashed by laying it flat on the cake. Well, this is the finished product.

My favorite part of this cake are the tiny little notes all around.

This was supposed to be a “small” cake for a friend’s brother’s belated birthday. I do a lot of small 6″ cakes for various occasions, but once you give me a theme, it’s really hard for me to stay within the lines, so to speak.

This is a fairly modest 2 layer 10″ square cake shaped like an old school DJ turntable. I didn’t go all out on details because it was supposed to be a “small” cake, but I thought it came out pretty solid!

This is what my day-job looks like from outside. A co-worker recently threw a going away party for one of his close colleagues. I wasn’t able to attend the 75-cupcakes spread because I was on my way to DC, but I did manage to snap some shots of this cake I made for the celebrant to take home with him, along with all our well-wishes.

Not only did I lug this cake into work, but I also toted in the 75 cupcakes….all this BEFORE boarding my ride to DC! I know, I know…I have super powers. Shhh….don’t tell anyone!

Dual-Themed: Jem & Thundercats

Wait, what?!?!?! An 80’s cake? With 80’s cartoons??? On the same cake???

Have I died and gone to heaven?

My first initial thought was, “Oh, how cool!!” Then I realized it would only be feeding about 15-20 people so a huge cake wouldn’t be necessary. One would think making a smaller cake is easier, but remember that the cake is my canvas, so giving me a smaller canvas to work on means having less space to decorate. With that being said, how do I get Jem AND the Thundercats all on the same cake without making it look like a clash that never should have been?

I guess, like this:

This is a quarter sheet cake with mini-chocolate chips along the sides. It’s death by chocolate: chocolate cake, chocolate frosting, and mini-chocolate chips.

The Buddy Christ

My buddy Anwar comes up with the MOST creative ideas for cakes. He is responsible for the Ghostbusters Cake and for “Birthday Meme; Why U No Happy“. Nothing’s better than a customer who knows exactly what he wants, and is completely out of the box. Pop culture is really one of my top subject matters when it comes to cake. And the recipient is always very happy and sincerely surprised when they get their special confection.

Without further ado, I present to you all: The Buddy Christ

I was supposed to make the figure out of cake or rice crispy treats, however, the cake was much too soft to hold any form, and the rice crispy treats kept sliding down the dowels after the fondant was applied. There has to be a better way, I know.

I went with full-on solid fondant with a wooden down going down the middle and a lighter lollipop stick going across to keep his arms up. However, with time and humidity, as well as the weight of the fondant, his arms were threatening to fall down, as well.  Sculpting fondant figures is certainly NOT an easy feet, and now I know why other decorators charge so much for them. Lesson learned.

Yes, it’s made of cake. And it’s sitting on top of an 8″ round cake. Since the customer was on a budget, I scaled back the usual fondant covered extravaganza so I could accommodate her price range. I think it still came out really cute, and the purse is all edible.

Shoe Box Cake

What kind of cake do you make for an 11 year old, aspiring fashionista? A SHOE cake, of course!

The shoe is made of gumpaste. There is a skewer going through the heel to keep it in place on top of the cake.  It is embellished with edible glitter. If you are attempting this at home, please be sure you get cake decorating glitter and NOT glitter out of the craft section of your local craft store. They are not the same thing.

The shoebox is all cake. Vanilla cake filled with chocolate mouse, covered in fondant. My first of many more shoes to come!!

A special order a little out of my norm, but still enjoyable- as always!

Inside is red velvet cake, cream cheese frosting and a nice shot of Frangelico. It’s coated in pink candy coating and decorated with sugar hearts, a red hot, and painted with food color.

I love it when my two worlds collide!! Behold, the Beer Mug Cake!

This is a stack of 6″ round cakes covered in fondant and marshmallow fluff (for the foam) on top of a half sheet cake. The flavor: Irish car Bomb. This is a chocolate Guinness Cake with a Bailey’s flavored buttercream. I did not drench it in Jameson’s as there were kids at this party.

The sheet cake is covered in fondant and hand painted with food color to achieve that wood feel.

Sweet 16 Masquerade

What’s better than making an awesome cake? Working with awesome customers like Amanda and her mom Susan. They had a very specific look in mind for Amanda’s Sweet 16, and I hope I was able to give them what they wanted.

This is the first pillow cake I’ve made, and when you match that up with masks (my personal favorite cake decor), the possibilities are amazing! Inside the pillows are cherries and whipped cream. That’s sandwiched between two sheets of dark chocolate cake. The flavor is black forest. The mask is made of gumpaste.

My customer sent me a picture of a baby blanket they wanted the cake to coordinate with. First time I got to use my quilting tool!

This is a half sheet, cannolli-filled cake with vanilla-almond frosting, covered in vanilla and chocolate fondant.

Spiderman – Take 2

Not every cake I make comes out spectacular and perfect. Every now and then, I end up with a Cake Wreck. Such was the case a couple of weeks ago. High humidity, a weak cake board, a soft cake and heavy frosting all contributed to a disastrous cake which resulted in a Spider Man catastrophe very similar to the Broadway show – a chaotic mess. I was left with NO Spider Man to top the base cake. The decorations I had piped all over the sheet cake were ruined, and  I barely made it to the party in time just so they had a cake to cut and serve…It was a nightmare and I felt absolutely horrible for ruining the party.

I was given the chance to try and make it up to this family. This cake is nothing like the original cake, but they wanted a much smaller cake, and I took some creative liberties. My Spidey figurine was not coming out Spider Man-like at all, so I opted to go with a candle instead. I wasn’t taking any chances messing up this cake this time around!

“Dick Spurtz” (NSFW)

That’s the one male porn name that comes to mind whenever people bring up porn names. “Dick Spurtz”

So, obviously this is an Adult Cake! My customer wanted a *ahem* piece at the point of crescendo spelling out “Happy Birthday” in spunk. That’s classy. It’s not for everyone, but I do love a creative order. It doesn’t get more original than this!

This is an Irish Car Bomb flavored cake: Chocolate stout beer cake with Bailey’s and Jameson’s. It’s filled with Bailey’s flavored buttercream and frosted with Jameson’s infused chocolate ganache.

I still haven't gotten my camera back. (Hint, Hint, MOM!) This was taken with my phone.

Perhaps it's the kind of cake that doesn't really require a close-up anyway. Oh, those are white chocolate peckers adorning the sides.

Well, ONE close-up can't hurt! (Watch your eye!) It's all in the detail!

Yeah, you know it!! I was born in ’78. The 80’s pop culture may come in as a close 2nd to my geek/gamer theme favorites! This may be one of my most favorite cakes of all time!

This is an 8″ chocolate cake with chocolate frosting and filling. It’s covered in fondant. The Ghostbuster emblem is cut out of fondant and painted with gel food coloring. The Staypuft Marshmallow Man and Slimer are also sculpted out of fondant. I’m a proud momma when it comes to this particular creation!

Very understated gift box-shaped cake. What I loved about this order was a new recipe I was able to try out. Butter cake filled with maple and walnut buttercream. It was a rich, maple flavored buttercream with chopped walnuts scattered throughout. It got rave reviews.

The EPIC win, indeed!

Geeks, nerds, techies, gadget freaks; they all hold a soft spot in my heart. Nothing’s sexier than a Smartie in my book! So, you can imagine how much fun I had creating these 1-Up Cakes for my Gamer friends.

The NYCGI (New York City Game Industry) holds monthly meet-ups for game-minded folks looking to break into the game development world. Here’s their website for more information on that: http://nycgameindustry.com . Where do they meet, you ask? At this VERY awesome bar in Brooklyn called Barcade. Not only does it offer wall to wall local micro-brews (for you beer snobs out there), but they are jam-packed with all the retro arcade games from years far gone. I’m talking Pac-Man, Donkey Kong, Centipede, & Asteroids, just to name a few. This spot offers plenty to the Game Makers and the Game Players.

Now, for the cakes:

Gamer Goodness - Fondant Cupcake Toppers on top of Vanilla Amaretto cupcakes w/ Chocolate Frosting.

So, I didn’t have enough time to make enough toppers for all 24 cupcakes. The cupcakes below are called “Strawberry Kisses”. It’s vanilla cupcakes, drenched in milk chocolate Godiva liquor, filled with strawberry filling, and topped off with chocolate frosting “kisses”. One of my favorite flavors!

I’ll take a class eventually, and hopefully the pictures of my cakes will finally do the originals some justice. For the record, I didn’t take these pictures, but the one’s I did take didn’t come out any better. It may be time for a new camera…

So, my little fondant gamer toppers are not PERFECT. I’m missing some logos and there are a few proportion/ratio problems. With time (or lack thereof) always being my enemy, I had to forgo a few details here and there. However, this is the MOST fun I have ever had working with fondant. It brought back a lot of fantastic childhood memories, and I was actually there to see the Gamer’s reactions to my work, and to see them enjoy gobbling them up!

Frankly, it’s one of the proudest moments I’ve had in my baking career; making something with my own two hands in the images of things I loved for awesome, appreciate people who were thrilled and happy with my efforts. You can’t ask for much for than that!

My first attempt at a 3-D car cake. The professionals make it look so easy! I watched someone else attempt this once, and it was a disaster. My Dungeon was too hot, it was so humid, the fondant was melting off the cake! This time around, I did most of the  fondant work outside of my Dungeon, in a more climate controlled environment. I think the front end and detail work could use some improvements, but I’m very proud of my first attempt!

Hey! That's me!

Some old school pictures of cakes from birthdays past. I threw in one of me working on it just to change things up a bit. Sorry the picture isn’t great. Someone else took it on their camera. I hate those date tags, but what can I do about it now?

I made this cake for my old girlfriend’s fiance’s birthday. There’s a spice and chocolate cake combo inside. It’s frosted with chocolate ganache. The outside is all fondant sprayed and painted. The ropes are made of ribbon. The ring posts are wooden dowels covered in fondant and then painted black.

Vanilla cake with white  chocolate mousse filling covered in vanilla butter cream. I would have done him up in yellow fondant, as well, but it wasn’t in the customer’s budget. I conceded by doing up some of the deco in fondant at no extra charge.

I love it when customers give me a challenge. This is a cake topper for a man’s baby shower cake! This gentleman and his wife were expecting a baby boy. Being a die-hard Eagle’s Fan, his coworkers asked me what I could come up with. The bear is made of cake, furred up in chocolate frosting, and outfitted in fondant. I know nothing about football, so when they told me the jersey was backwards, I quickly explained that the bear is a “baby” and I meant to do that so it would look cute…which it did! 😉

The father-to-be was so touched, he saved the teddy bear cake topper for the baby’s first birthday! He had it wrapped up like a wedding cake tier and froze it.  I don’t know what the best part of this cake was; the challenge to make a baby shower cake for a male, or the reaction I got when the recipient saw it for the first time. Priceless.
