I’ve done a few of these, and this shape has been the most sturdy thus far. It’s red velvet cake with cream cheese frosting entirely covered in fondant. All the embellishments are also done in fondant. The pattern is painted with edible gold dust and a touch of vodka. This cake was big enough for about 10 people.
Not every cake goes off smoothly. Sometimes the weather works against me when I’m handling fondant and sometimes disasters happen en route to the location. Such was the case with this cake. It was one of the hottest days of the summer and the fondant was tearing and ripping. When I finally had the cake loaded and on its way to the venue, some jackass driver stopped short in front of me, causing the cake to slide forward, the bag to topple over, and all the layers on the “box” to shift, tearing the fondant. The delicate tropical flowers I spent hours sculpting the night before were either smashed or cracked. It took me nearly 3 hours to fix all the damage one hard brake caused, but my customer was incredibly understanding and patiently shifted around the party itinerary until I arrived.
The cakes are all red velvet and filled with cream cheese frosting. The box is made of chocolate fondant. The flowers are gumpaste. The bag is covered in fondant and gumpaste, and each of the GUCCI symbols are hand-painted with edible color gel. The “sand” is brown sugar.
So, this is my latest and greatest this week. I’ve tried out a new technique that SHOULD (for all intents and purposes) replicate a sorta cheetah pattern INSIDE the cake itself once it’s cut. My Birthday girl has yet to take her cake home and cut it yet, so I don’t know whether or not it worked. I’m hoping she sends me a picture so I can update this post tomorrow morning.
This is a 10″ square two-layer cake with chocolate frosting on the inside. The cake is interlaced with chocolate and caramel cake to replicate a cheetah pattern on the inside of the vanilla cake layers. It’s enrobed in chocolate fondant. The Louis Vuitton symbol as well as the mini LV bag is also made of the same chocolate fondant and vanilla fondant. They are embellished with edible gold dust.
